I need to lie down somewhere quiet!

I have been asked to do a Wedding Cake - 4 tiers of different 'sponge cakes' one of which is a coconut cake. I have never made a coconut cake before so thought I'd better do some research. Here is Nigella's recipe (with chocolate on top rather than the coconut icing suggested). I am not going to hunt for any more recipes, I have found Nirvana. This cake is light and delicious, beautifully flavoured and also perfectly flat. Just what I need! It was Saturday pudding - eldest son wanted a fat free yoghurt instead of this (where does he get it from?) and youngest son was out for tea. So there's plenty left if anyone wants to try a bit...

Sometimes something happens that makes me wonder what on earth is going on. Is the world coming to an end? I question the meaning of life. Why? Where? How? What?

Yesterday was one such time. Here are both my children sitting in the kitchen doing their homework. I had not nagged them to get it done. They are not fighting. I had not bribed them. They are both concentrating hard, not talking, just quietly getting on with what needs to be done.

Just what the heck has happened in the world?

But that was not all.

Mr Stressy wasn't stressy. He even smiled!

That coconut cake is pretty much divine, but I do implore you to try it with the coconut buttercream - it is one of the best icings I have ever come across!

ps: I L-O-V-E coconut cake!!! The is an Amish market nearby that makes one and it is To. Die. For. (WITH the coconut butter cream frosting of course.)
